100% from farm to plate
The popularity of plantbased eating is at an all-time high.
Café Forty One menus have always been entirely plantbased focusing on sourcing fresh seasonal produce, from farm to plate. In-line with the hotel’s ethical stance and long history of being plantbased with Nosh Kitchen, Raw and now Café Forty One, plantbased menus are more inclusive reflecting the lifestyle choice of many who look to the health benefits and contribution of taking care of the planet.
Seasonal ingredients are UK sourced where possible but as Chef’s menus are influenced by her Italian and Japanese heritage some of the ingredients are international. The breakfast menus features plantbased alternatives to eggs for breakfast – scramble made from tofu and omelette from chickpeas.
“I grew up cooking and eating mainly Japanese and Italian cuisine and it’s what I am most passionate about. Wherever possible I try to source seasonal British produce and I’ve created recipes which actually allows those ingredients to sing!”
Everything we did as a family centred around food. My father was a chef specialising in Tuscan cuisine and as mother is Japanese Summer holidays were spent in Japan and we were always cooking Italian and Japanese cuisine at home. My family inspired and built the foundations for my menus. I have always been passionate about food.
As a result of becoming ill in 2009 I discovered and adopted a raw food plant based diet which healed my health problems. I worked in broadcasting for 10 years, but never feeling fulfilled, I invested in a vegan cookery course which convinced me that this was what I was destined to do. I went on to study with several leading vegan Chef’s. To me, a plant based approach to eating is inclusive and accessible to anyone. Our ingredients come from all over the world but I am determined to source as much seasonal produce from the UK.”
Suitable for all – vegetarian, vegan, non-vegetarian, non-vegan and those with dietary requirements our plantbased menus are incredibly delicious with no need to sacrifice taste for health. Our menu is 100% plantbased but not totally gluten free. Most allergens can be catered for if given 24 hours advance notice.
